Spanish YouTubber, Mark Villa Terra, is tasked with making a Cocido Madrileño – using only Irish ingredients. His journey to find replacements for such things as jamon serrano, chorizo and chickpeas, sees him in Wicklow among rare breed pigs and in the midlands where an Irish Argentine is making gaucho sausages.
