Ariana Siliprandi took on the challenge of cooking the dish that her fellow Italians, living in Ireland, had nominated a the favourite dish of their country. The real challenge, though, was creating a version of it with only Irish ingredients. After all, how do you find a replacement for two legendary Italian cheeses – Parmigiano Reggiano and mozzarella di bufala?
